Night harvesting and whole cluster pressing, are two important techniques used in making this wine. We find the wonderfully cool temperatures of night harvesting to be a key in getting fresh luscious fruit and a little extra acidity in the wine. Whole cluster pressing minimizes skin contact which results in wine that has great aging potential.
